These vegetables have a undesirable effect due to a sugar Among these is raffinose, a  sugar which remains undigested until it reaches the colon where it is fermented by bacteria, leading to gas and bloating. This effect, while natural, can cause considerable discomfort for many individuals

Raffinose belongs to a group of carbohydrates known as oligosaccharides, which are present in cruciferous vegetables like broccoli. This complex sugar is notoriously difficult for the human body to break down because it lacks the enzyme to fully digest it.
